Garlic-Butter Seared Oyster Mushrooms

This is the recipe we make most on the farm. Oyster mushrooms crisp up beautifully when you give them room and a little patience — don't crowd the pan, and don't stir too soon.
Ingredients
- 1 lb oyster mushrooms, torn into bite-sized pieces
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, sliced
- A few sprigs fresh thyme
- Salt and pepper
- Splash of soy sauce or lemon juice (optional)
Instructions
- Heat the oil in a large skillet over medium-high. Add the oyster mushrooms in a single layer — work in batches so they aren't crowded.
- Sear undisturbed 3–4 minutes until deeply golden, then flip and sear the other side.
- Add the butter, garlic, and thyme. Baste the mushrooms in the melted butter for 2 minutes.
- Season with salt and pepper and finish with a splash of soy sauce or lemon.
Pile them onto toast, fold into an omelet, toss with pasta, or crown a steak.
