Garlic-Butter Seared Oyster Mushrooms

This is the recipe we make most on the farm. Oyster mushrooms crisp up beautifully when you give them room and a little patience — don't crowd the pan, and don't stir too soon.

Ingredients

  • 1 lb oyster mushrooms, torn into bite-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, sliced
  • A few sprigs fresh thyme
  • Salt and pepper
  • Splash of soy sauce or lemon juice (optional)

Instructions

  1. Heat the oil in a large skillet over medium-high. Add the oyster mushrooms in a single layer — work in batches so they aren't crowded.
  2. Sear undisturbed 3–4 minutes until deeply golden, then flip and sear the other side.
  3. Add the butter, garlic, and thyme. Baste the mushrooms in the melted butter for 2 minutes.
  4. Season with salt and pepper and finish with a splash of soy sauce or lemon.

Pile them onto toast, fold into an omelet, toss with pasta, or crown a steak.
